Hawaiian Honey Burgers
"These burgers were a favorite when I was growing up. I now use them as a way to 'fancy up' a barbecue without a lot of extra preparation. They keep me out of a hot kitchen yet let me serve a nice meal. Fresh fruit and corn on the cob round out this meal."

You Will Need
1/2 cup honey
1/4 teaspoon ground cinnamon
1/4 teaspoon paprika
1/4 teaspoon curry powder
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
2 pounds ground beef
1/4 cup soy sauce
1 can (23 ounces) sliced pineapple, drained
8 hamburger buns, split and toasted
Lettuce leaves (optional)

What to Do
1. In a bowl, combine the first six ingredients.

2. Crumble beef over mixture; mix well. Shape into eight 3/4-inch-thick patties.

3. Grill the burgers, uncovered, over medium-hot heat for 3 minutes on each side. Brush with soy sauce.

4. Continue grilling for 4 to 6 minutes or until juices run clear, basting and turning several times.

5. During the last 4 minutes, grill the pineapple slices until browned, turning once. Serve burgers and pineapple on buns with lettuce if desired.

Serves: 8

The Big Kahuna Burger

For Quentin Tarantino Week, I decided to review the tastiest of burgers, “the cornerstone of a nutritious breakfast,” the Big Kahuna Burger. The only problem is, Tarantino made them up.
Pulp Fiction isn’t the only place BK burgers show up. They’ve been seen in almost all of Tarantino’s flicks, including a few outside sources. But when I actually went looking for exactly what the Big Kahuna consisted of, I came up a little short. The burger’s official website (didn’t you know, everything has one nowadays) didn’t help much, and you can find it on any number of menus using a Google search, turning out everything from a make your own burger (two toppings), to what I thought was the closest, a burger with pineapple and bacon. But there’s no way Jules would eat bacon, pigs are filthy animals (maybe he didn’t know there was bacon in it, but once he took such a big bite, he’d have known, and he might have killed Brett right then and there).

So I took it upon myself, with the help of food guru and friend Spitz, to standardize the recipe for the Big Kahuna burger. We worked for hours (twenty minutes) trying to figure out just how it would taste, and what the Big Kahuna meant to us. It was hard work, and in the end we had to eat at least two burgers each, but we eventually came up with a tasty freaking burger, and I present it for you here, so that you too can enjoy:

BIG KAHUNA BURGERS

(yields 6 burgers)

2 lbs lean ground chuck or round
4 tbsp Teryaki marinade
6 pineapple slices
6 slices provolone or colby cheese
1 pkg Hawaiian Sweet Buns
Big Kahuna Secret Sauce (see recipe below)

Roll ground into 6 balls (approx. 1/3 lb. each). Flatten into patties, and add seasoning/salt and pepper to taste. Pour Teriyaki in large mixing bowl, coat and marinade meat, let sit for 20 mins., then grill over med/high heat to perfection. Add Sauce, pineapple slice (you can also grill those), and cheese (lettuce, tomato, and onions to taste). Now that’s a tasty burger!

BIG KAHUNA SECRET SAUCE

Equal parts ketchup and brown sugar
1 tbsp max mustard (dijon or yellow)

Simmer until sugar is melted and ingredients are fully mixed.

I love these things. There are a few variations– the burger’s page shows a double burger, so maybe there’s a single and double Big Kahuna. Fries are optional– Brett has them, but Jules goes without, but if you do have them make sure you go Holland style– add mayonnaise. I’m serious, they fuckin drown em in that shit. The only other requirement is Sprite through a straw, a tasty beverage to wash it all down.

Give up the Royale with Cheese, forget about Le Big Mac, the Big Kahuna burger is where it’s at. If you like hamburgers, give em a try sometime. Me, I can’t usually eat ‘em ‘cause my girlfriend’s a vegetarian. Which more or less makes me a vegetarian, but I sure love the taste of a good burger.

Grilled Stuffed Pork Burgers

Here is another stuffed burger recipe for you to try. If you don't want to use pork, you can certainly use ground beef, chicken, or turkey.

INGREDIENTS:

  • 2 pounds ground pork, preferably lean
  • 1 cup mushroom, sliced thinly
  • 1/4 cup green onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • olive oil
  • hamburger buns

PREPARATION:

In a medium skillet add olive oil, mushrooms, green onion, and garlic. Cook for 3 minutes, remove from heat and allow to cool. In large bowl, combine ground pork, mustard, Worcestershire sauce, salt, and black pepper.

Shape into 12-14, 1/2 inch patties. Scoop mushroom mixture onto half of the patties, and cover with the remaining patties. Seal edges well. Preheat grill for medium heat. Place patties on to grill and cook for 6-8 minutes on each side. Remove from heat and serve with buns and favorite condiments.

The true Hawaiian classic burger. While many people might think twice about topping a hamburger with pineapple, this is a great burger that everyone who tries it loves.

INGREDIENTS:

  • 1 pound ground beef
  • 3/4 cup teriyaki sauce
  • 1 small can pineapple slices
  • 1 large onion, sliced
  • 4 lettuce leaves
  • 4 buns
  • 4 slices swiss cheese
  • 4 strips bacon, fully cooked
  • 1 tablespoon butter

PREPARATION:

Drain pineapple juice in a bowl. Add teriyaki sauce and mix. Place pineapple slices and 3 tablespoons of pineapple teriyaki mixture in a resealable plastic bag. Turn to coat and set aside. Shape hamburger into 4 patties and spoon remaining pineapple teriyaki sauce over top.

Preheat grill. Butter buns. Place burger patties on hot grill and grill until done. Place buns on grill cut side down to toast lightly. Remove pineapple slices from bag and place on grill and cook until slightly browned and warmed through. Assemble burgers with patty, pineapple slices, lettuce, onion slices, Swiss cheese and bacon.

A quick and flavorful way to dress up the ordinary hamburger. Substitute ground beef with ground lamb for a more Mediterranean flavor.

INGREDIENTS:

  • 1 pound ground beef
  • 1 tablespoon capers
  • 1 tablespoon fresh parsley, minced
  • 1 tablespoon prepared mustard
  • 1 pickle, minced
  • 1 tablespoons bread crumbs soaked in milk, then squeezed
  • salt and pepper to taste
  • 4 large rolls or buns
  • 4 lettuce leaves
  • 4 slices medium tomato

PREPARATION:

Combine ground beef, capers, mustard, parsley, pickle and bread. Gently work together and form into four hamburger patties. Season with salt and pepper. Place patties on preheated grill and grill until done over a high heat (about 5 minutes). Serve on buns with lettuce and tomato.

½ pounds Ham, ground
¾ pounds Pork, ground
cup Quick oats
cup Brown sugar
2 tablespoon Flour
1 tablespoon Dry mustard
cup Hawaiian Punch
1
Egg, beaten
½ cup Milk
2 tablespoon Vinegar
6
Cloves, whole
cup Dark corn syrup
HAM BALLS SAUCE Ham balls: Preheat oven to 350øF. Combine all ingredients and shape into 1-inch balls. Place on greased cookie sheet and bake about 20 minutes, or until browned. Sauce: In sauce pan, combine brown sugar, flour and mustard, mixing well. Add punch and vinegar and mix well. Add cloves and corn syrup. Over medium heat cook, stirring constantly, until mixture thickens and becomes clear. In chafing dish or crock pot, place ham balls and pour sauce over. Serve with toothpicks. The ham recipe can be shaped into a loaf and served as a main course with the sauce placed over the loaf about 15 minutes before it has finished cooking (1 hour at 350øF) with extra sauce on the side.
